Winemaker Antonio Jiménez Sánchez comes from a family of farmers with no winemaking background. A passion for cultivating and caring for the land led him to study Agricultural Technical Engineering at university. After finishing his degree, he worked at a research centre dedicated to the characterisation and identification of grape varieties. At the same time, he started a master’s degree in oenology and also helped his friend in a winery. In 2006, Antonio and his partner bought a 2.5 hectare vineyard of dry-farmed, bush-vine Manstrell. They began to cultivate the grapes sustainably with the least environmental impact, using traditional rain-fed agriculture, organic and biodynamic methods. In 2018, they created Bodegas de Fábula, and more recently, Antonio de Fábula Vinicultor, making wine in a natural and traditional way using only grapes, and without adding sulphites, yeasts or filtration. They may appear precipitated. The winery is certified by the Council of Organic Agriculture of the Region of Murcia, the Seal of Varietal Wines, and the Seal of Artisans of the Region of Murcia.

Grown at 480m elevation and only 603 bottles produced for this vintage. Whole bunch press. Fermentation in stainless steel and finished in the bottle. Natural racking. Malolactic. Cantact with lees.
